You've invited the guests, delegated the pies, and stuffed the bird. Aunt Mabel walks in two hours early, and that's when you realize you forgot to prepare appetizers. Even the best laid plans sometimes come up a little short. In that spirit we've put together a quick recipe that you can whip up at the last minute for some tasty dip. Serve with a selection of crackers and whatever vegetables you have on hand and no one will ever know you weren't fully prepared. And don't worry, we won't tell either. Quick and healthy vegetable dip
What you will need:
1 cup sour cream
1 cup lowfat yogurt
Herbs and spices to taste
1 large bell pepper
Crackers and/or whatever veggies you have on hand
What to do:
- Cut bell pepper in half, hollow out and set aside
- In a bowl, mix sour cream and yogurt
- Add herbs and spices to taste. Our favorites are curry or a mix of basil and thyme.
- Mix well then serve in hollowed out peppers
IDEA #1
Make a lovely dish of fresh cranberry sauce.
What you will need:
2 cups sugar
1.5 cups water
1 package fresh cranberries
What to do:
- In a medium pan heat water and sugar. Bring to a boil.
- Add cranberries and return to boiling
- Reduce heat to low. Simmer, covered, for several minutes until berries pop.
- Stir well; chill and serve.
Add a handful to each cocktail or glass of wine for a colorful, festive twist. For bonus points stab 3-4 onto a toothpick for instant garnish.
IDEA #3
Toss a few into the green salad for instant tang.
