The LifeSource deli has always offered some of the finest vegetarian food in Salem, and its newly expanded buffet adds more to an already solid and tasty menu. The deli has expanded its popular vegetarian grab-and-go offerings to a full hot entrée buffet ($6.99 per pound), organic salad bar ($6.99 per pound) and pizza by the slice ($2.99). During my visit the offerings in the hot bar included Monterey lime enchiladas, twice-baked potatoes, Kung Pao tofu with cashews, Indian curry with toasted almonds and cranberries, roasted root vegetables, baked balsamic vegetables and stir fried bok choy. I sampled a bit of each and found all of them very flavorful, each with a unique blend of complementary ingredients and seasonings.
My particular favorites were the burgundy-shaded roasted root vegetables, the enchiladas and the Kung Pao. Three soups are available daily. On my visit I had a choice between chickpea spinach chowder, "squampkin" soup and creamy tomato basil. To aid your decision-making process there are small soufflé cups and taste spoons so you can sample any or all of the day's offerings and make your choices.
In the cold case there are chilled entrees and fresh juices that provide you with enough selection for almost any palate or dietary need.
Speaking of dietary needs, the pizza case sometimes offers gluten-free options. You can eat your meal there in the new eating area at the front of the store, or take it with you. Each week, a new entrée menu is printed and available at the bars.
The buffet bars are in service with the store hours, so there are breakfast choices as well as dinner entrees for your dining convenience.
