St. Patrick's Day desserts make for a fun Irish celebration

It's funny. Going through a list of Irish recipes, nearly all of them refer to alcohol in the name and even more of them call for alcohol as an ingredient. This must be why we love the Irish so much.

Guinness Cake, for instance, is fruitcake-like, but calls for, you guessed it, Guinness beer.
To prepare this Irish goody, cream 1/2 cup of butter and 1 cup of brown sugar until the sugar is dissolved. Then beat in three eggs. Add 2 1/4 cups flour, a pinch of salt and a dash each of cinnamon, nutmeg and cardamom. Add your choice of dried fruit -- raisins and cherries both work well, or whatever you prefer. For extra flavor you may want to first soak them in Guinness or other dark beer. Finally, mix in 8 ounces of Guinness, pour mixture into 8-inch cake pan and bake at 350 degrees for two hours until firm in the center. Serve with a bit of whip cream or vanilla ice cream if desired.

If you're not in the mood to cook, but still want a distinctly Irish dessert, try an Irish sundae. Buy a gallon of vanilla or coffee-flavored ice cream. Pour Irish Cream, chocolate sauce and your choice of nuts over top. Enjoy!

No Irish dessert is complete without a good and well-spiked cup of coffee. That means a shot of Irish Cream, a splash of half and half and a teaspoon of brown sugar. The Irish definitely knew how to get their drink on.
