Yummy holiday recipes can double as gifts

Tis the season for realizing at the last minute that you don't have a gift for Auntie Myrtle -- and, oh, did I mention she'll be here in an hour? What better present than a nice warm homemade gingerbread cake? A quick trip to the dollar store for a festive platter that she can bring home with her and -- voila! It's like you'd planned this from the beginning. Don't forget to attach a recipe card. Gingerbread Cake is also excellent for holiday potlucks or as a Christmas Eve dessert for the whole family.

Quick and Easy Gingerbread Cake

What you will need:

2 1/2 cups flour
1 cup molasses
1/2 cup sugar
1/2 cup shortening
1 egg
1 1/2 teaspoons baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground cloves
3/4 teaspoon salt
1 cup boiling water
Whipped cream

What to do:

  1. Preheat oven to 350
  2. Butter and sprinkle with flour a 9" cake pan
  3. On low speed, mix together all ingredients except for whipped cream
  4. Mix at medium speed for 3 minutes
  5. Pour batter into pan, bake for around an hour, or until toothpick comes out clean
  6. Let cake cool completely, top with whipped cream
