Elvis Presley's birthday is January 8, and what better way to celebrate the man who gave the world white, sparkling jumpsuits than by baking up some fresh peanut butter-banana zucchini bread? After all, those were two of the King's favorite foods. So put on your blue suede shoes and get cookin'. What you will need
Wet ingredients
4 eggs
1 1/2 cups sugar
2 tsp. vanilla
3 ripe bananas
1 1/2 cups grated zucchini
1/4 cup peanut butter
Dry ingredients
3 cups flour
1 tsp. salt
1 1/2 tsp baking soda
1 1/2 tsp. baking powder
peanut butter chips
What to do:
Pre-heat oven to 350 degrees. Combine dry ingredients minus the peanut butter chips. In a large bowl combine wet ingredients. Mix with a balloon whip or hand blender. Stir in dry ingredients and fold in peanut butter chips. Bake at 350 degrees for an hour or until an inserted knife comes out clean.
